Honey contains about 200 active components required for development and proper functioning of the human organism. In various types of honey, more than 300 different compounds have been found , and the new ones are constantly being discovered. Perhaps the most important feature, used to describe the composition of honey, is variability, since  there are no two honey samples that are completely identical. Despite the development of different analytical methods, honey composition have not been fully explained yet, which prevents industrial production.
